I don’t know where to begin… If you love coconut you NEED to try these. If you don’t like coconut stop reading now.

I am a huge fan of Prana organic products. I have their quinoa, chia seeds, cacao nibs, trail mix etc. Prana makes some quality products. I highly recommend them.

These coconut strips are my latest obsession. No sugar, sulfite free, gluten free just 100% pure coconut. I eat them straight out of the bag like candy! They would be great on top of oatmeal, cereal, in energy bites and on yogurt.

Go to Costco today and buy them. 7.99 for a 500 gram bag.

Après ski dinner? Chicken Marbella

I wrote about this in the fall but this one pot delicious wonder is a perfect meal for winter.

It is hearty and takes 5 minutes to prepare. Make it one day in advance to let the flavors come together and then after a full day of skiing or skating or both put it in the oven for 45 mins and voila!

Dinner is ready. I just put it together now and everything is ready for tomorrow’s dinner. Serve it with rice and a salad. It makes for delicious leftovers too.

Sundried Tomato Shrimp Pasta with Basil and Cream

If you love pasta you will love this dish! It is so simple to prepare and only uses a few ingredients. You could pull this pasta off in 15 mins!

What you need for 2 servings:

A small handful of dried fettuccine or linguini
Salt for pasta water
Shrimp 21-25 count (10 to 12 shrimps)
10 thinly sliced sundried tomatoes (dried or oil packed)
1 small onion thinly sliced
5 basil leaves
Red pepper flakes
1 garlic clove
1 tbs oil
1/2 heavy cream
Splash of white wine
Real Parmesan cheese

Directions:

1. Boil your water add salt, and add your pasta – cook pasta according to package
2. In a sauté pan on Med/high heat add oil and onion, garlic, sundried tomatoes. Cook for a few minutes. Add shrimp. After a minute add a splash of white wine.
3. Remove shrimp, add cream and reduce for 1-2 minutes
4. Drain pasta, add shrimp and pasta back to sauté pan to absorb the sauce.
5. Toss in basil and grated Parmesan.

Taste for seasoning… Anything missing? Add it. Red pepper flakes, salt, pepper…

Devour.

Delicious chia seed pudding with fresh fruit

Ahh the chia seed. I have been using these little babies for the last 3 years now and they are delish! You can add them to smoothies, salads, yogurt etc.

My favorite way to eat them is in this chia seed pudding. It is also perfect for those people who are starting New Years resolutions that involve eating better.

Make it today – this recipes makes 6 servings.

Ingredients
2/3 cup chia seeds
1 1/2 cups of unsweetened almond milk or rice milk (I prefer almond myself)
1 100 ml container of greek yogurt vanilla flavored 0 or 2% milk fat
1/4 teaspoon pure almond extract (or vanilla)
1/2 tsp of pumpkin spice seasoning
Pinch of salt
Optional – 1 tbs of maple syrup if you need it sweeter
Optional – cacao nibs
Assorted fresh fruit (you can cheat a little and buy already prepped fresh fruit salad at your local grocery store and just cut is up into smaller pieces)

How to make it
Put chia seeds, almond milk, yogurt, almond extract, pumpkin pie spice and a pinch of salt in a 6 cup Tupperware container with a lid. Take a whisk and mix everything together. Refrigerate for 2 hours or overnight. When ready to serve, spoon into bowls and top with fruit and or cacao nibs.
